Makin Banana Pancakes

I had heard and seen pictures on twitter and pinterest about these awesome 2-ingredient banana pancakes. I’m a simple person, I don’t like to get too crazy in the kitchen, so this sounded perfect for me! The two ingredients for these pancakes were bananas and eggs (the recipe I followed had you do two eggs to every one banana), and then you could add a little baking soda and cinnamon if you wanted to, so I did.

After I pulsed it a few times in my blender the batter looked and smelled great! I was excited. I then got my pan nice and hot and sprayed some cooking spray on the bottom, poured a little batter in, and everything looked wonderful; in fact, they looked the way any normal pancake would look!

Went I went to flip them, it was a whole different story. The darn things wouldn’t flip!! I figured maybe there was a learning curve and if I poured in a second set of batter I’d get better….false. If anything, it got worse. They would cook on the bottom but stay so gooey on the top that when my spatula attempted the scoop underneath the whole thing would spill over and turn into a scrambled egg-like substance. In the end this is what my “pancakes” ended up looking like:

Delicious right? Surprisingly yes; the presentation may not have been there but they sure were delicious little poops on a plate. So where did I go wrong? Anyone else attempted this and got a better result? The only thing I feel like I did differently was that I used a frozen banana that I then defrosted and put into the batter, could this have caused a problem? I don’t know why….HELP!
