Healthy Running Eats I’ve Tried

Recently my husband cut gluten and dairy out of his diet for health reasons and I have had to discover new recipes to cook for family dinners each night. Something I have come to notice is that without gluten or dairy as an option, we tend to eat a lot of vegetables and fruit in our meals. So I’ve compiled a few of my favorite healthy eats as of recently so that you can try them too.

 

Gluten Free & Dairy Free Recipes

Notes: The only thing we changed on this recipe was omitting the mushrooms (my silly family doesn’t like them). These wraps were DELICIOUS!! A big hit for the whole family.

Spicy Peanut Chicken with Rice

Notes: I added a little extra cayenne pepper because our family likes things spicy. I also served it with brown rice instead of white.

Notes: I omitted the Greek yogurt to keep it dairy free. I also suggest doing less garlic and less onion, other than that it was AMAZING. The jalapenos and cilantro give it a great little kick with a bit of freshness you aren’t used to tasting with a chili.

Mexdican Rice Bowls recipe

Notes: To make this recipe even easier and very flavorful I substituted the baking & spices with just taco seasoning. Great go-to on the days you don’t have a ton of time…or produce.

sriracha chicken & rice recipe

Notes: We didn’t have sugar snap peas to add to ours, but even without that it was delicious. Once again we used brown rice instead of white. We love our spicy at this house 😀

Also, we really struggled to find desserts he could eat so if anyone is lactose intolerant and gluten free, the following are some sweet treat ideas for you:

  • Fruit Popsicles
  • Slurpees/icees/snow cones
  • Pie made with this rice chex pie crust
